Sweet cardoons from Pinarella

These curved cardoons are a speciality of our region. Typically, this winter vegetable has a slightly bitter flavour, which not everyone likes.
But the variety which grows in the sandy soil in Pinarella is notable for its unmistakable sweetness. It ripens beneath the sand, losing its bitter aftertaste.
It is pale in colour, naturally curved, and soft to the bite, with a delicate but delicious flavour.
Today, it is still farmed entirely by hand, using traditional methods handed down through the generations. This makes it a healthy and delicious local product, which is used in a variety of both sweet and savoury recipes.
You can find it on sale at the market in the town. Look out for the label which shows it is authentic.
