Oyster farming has only recently been introduced to Cervia, in the same clean seawaters where mussels have traditionally been grown, three miles off the shore.

Straight from the sea to your table! To maintain their freshness, the oysters are harvested, packed aboard the boat, and delivered on the same day.

At present, Cervia oysters are only available in the fish restaurants by the canal.

They offer a variety of oyster-based dishes, but to really get a taste of the sea we recommend eating them raw, fresh and dressed in the traditional way.
